Ronnie, if your two boxes of rubber were in proper storage before you bought them, they can last for a long time. Even years. That's provided that you have kept them properly stored since you received them.
Rubber should be kept away from light as much as possible, as prolonged exposure to light will cause them to deteriorate fairly rapidly.
I also like to keep my rubber in a cool place (the fridge) since I've heard that heat is also not good for them. Don't know how much heat is excessive, I've heard of long-time modelers who store their rubber and motors in desk drawers at room temperature, but room temp. can vary a whole lot! Maybe I'm just being over-cautious with the fridge thing
Hope your surgery complications end soon.

Sometimes there is a lot going on here, sometimes it gets real quiet.
Storing rubber motors in the fridge is fairly common practice. (Probably, for the non-married modelers.
)
Kept in a climate controlled house, sealed in a bag, I would guess 2 years is reasonable storage life.

I have rubber (Tan II, Tan Super Sport) That is ten years old at least and I use for contest flying with no issue. You do need to keep it stored in a cool dry place out of the light. There are guys I fly with that have flown using old Perrelli rubber (that was good stuff a long time ago) That was at least 30 years old and it still held up. So you can keep rubber for a very long time providing you take care of it.
